- In a large bowl, mix together your mayo, pepper and salt. Then, add in your shredded chicken, celery, raisins, and red onion to the bowl. Stir until well combined.
- Cut your Sweet Onion rolls in half and spread a little of your mayo on the inside and toast on a stovetop pan. (Trust us – mayo is the key to a crispy crust.)
- Add your lettuce and chicken salad mixture to your rolls and voilà! A delicious mini chicken salad sandwich.
