Quick & Easy Egg Salad Sandwich

Created with simplicity in mind, this sandwich features a creamy, savory egg salad tucked between two slices of our mouthwatering Sola bread.


  • 6 Eggs
  • 5 Tbsp Olive oil mayonnaise
  • 1 Tbsp Dijon mustard
  • 1 tsp White wine vinegar
  • 1/2 Tbsp Paprika
  • 8 slices of Sola bread
  • Head of lettuceChives (chopped)
  • Salt & Pepper to taste


  1. Add eggs to a pot of water and boil for 12 min. Then, transfer eggs into a bowl with ice water and let sit for 5 min.
  2. Next, peel and cut the eggs in half and add them to a medium sized bowl.
  3. Add to the bowl with eggs the mayo, mustard, vinegar, paprika, salt and pepper. Take a fork and mix together making sure to chop up the eggs to the desired consistency.
  4. Take your Sola bread and add the butter, lettuce, and egg salad. Top with fresh chopped chives and a sprinkle of more paprika. Enjoy!
