Ingredients
- Place the diced chicken into a mixing bowl, add the mayonnaise, hot sauce, and seasoning, then mix until fully combined.
- Start with the cheddar cheese, placing on slice on four slices of low-carb Sola bread. Then top the slices with the chicken mixture and swiss cheese, repeat for each sandwich, then butter the outsides of the bread.
- Place a non-stick frying pan on medium to low heat. Add the olive or avocado oil and once hot, add the sandwiches.
- Cook for 3 minutes on each side until golden brown, crispy and melty.
- Serve with blue cheese or ranch dressing and celery sticks.
